Ingredients:

Directions:

  1. Grind Chia seeds and chop strawberries.
  2. Mix all ingredients in a bowl. You can control the thickness of the pudding by adding more or less almond or soy milk.
  3. Serve Chilled.

Chia Vegetable Stir Fry

Ingredients:

  • 1/2 tsp olive oil
  • 2 tbsp Chia Seeds
  • 1 tbsp ginger root minced
  • 4 garlic cloves finely chopped
  • 1/2 tsp toasted sesame oil
  • 3 tbsp tamari
  • 2 tbsp rice wine vinegar
  • 3/4 cup water
  • 4 cups kale
  • 2 carrots
  • 1/2 onion sliced
  • 1/2 bell pepper sliced
  • 3 oz mushrooms
  • 2 tomatoes chopped
  • 5 cups cooked brown rice

Directions:

  1. In a large wok or skillet, saute ginger & onion in oil over medium heat until softened (approximately 3 minutes).
  2. Add tamari, rice wine vinegar, and water. Stir fry for additional 3 minutes.
  3. Add vegetables, garlic, tomatoes, and chia seeds. Cover and cook for 10 minutes or until vegetables are tender, but still firm. Stir occasionally.
  4. Serve over rice.

Chia Rice Salad

Ingredients:

  • 3 cups cooked brown rice
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic
  • 1/2 tsp sea salt
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • 1/8 tsp cayenne pepper
  • 1/2 cup Chia Seeds
  • 1 zucchini thinly sliced
  • 1 tomato chopped
  • 2 tbsp parmsesan cheese

Directions:

  1. Place rice in a large bowl. Combine oil, chia, lemon, garlic, salt, herbs in jar, and shake well to mix.
  2. Pour over rice and lightly toss. Cover and let cool.
  3. Stir in vegetables and sprinkle on cheese or alternative cheese.
  4. Serve.

Ingredients:

Directions:

  1. Grind 2.5 tablespoons of Chia seed.
  2. Pour 16 ounces of water in a blender at low speed. For a great alternatives, try using lemonade instead of water.
  3. Mix chia seeds in while blender is on low speed.
  4. Blend for 10 seconds. You can add other items to the mix such as fresh bananas, strawberries, or raspberries. You can even add super food powders such as Acai.
  5. Let the the mixture sit for 5 minutes as the chia will absorb the liquid and thicken up into a gel like substance. Enjoy chilled.

Quinoa Pilaf

Ingredients:

  • 1 c. organic quinoa
  • 2 c. water
  • organic coconut oil
  • 2 cloves organic garlic, mashed or grated
  • 1/4 c. finely chopped organic onion
  • 1/4 c. toasted pine nuts
  • 1/4 c. chopped organic dried apricots
  • 1/4 c. organic raisins
  • 1 t. cinnamon
  • 1 t. curry powder (optional)
  • salt to taste
  • fresh ground pepper (if not using curry powder)

Directions:

  1. Cook quinoa in water and set aside to cool, in a large bowl.
  2. Saute onion and garlic in coconut oil until soft.  Then add pine nuts, apricots, raisins, and spices, stirring well to coat.  Add to quinoa and toss to distribute evenly.
  3. Return pilaf to pot or skillet and heat thoroughly.
